Are you staying in Anaheim or Garden Grove? That's two different cities...

The Fantasmic Dessert Buffet is held at the Disney Gallery. You'll probably be able to make those reservations when you call to make your Blue Bayou reservations.

Don't forget about California Adventure - Disney's newest theme park which definitely was not there 25 years ago.

Will you have young kids with you? If so, you might want to consider some character dining - Goofy's Kitchen, Ariel's Grotto, the Princess Breakfast at the Plaza Inn, Storyteller's Cafe, Minnie's Breakfast at the Paradise Pier (did I forget any?).

One of my favorite places to eat lunch is the Carnation Cafe on Main Street. They have great sandwiches and the Painter's Pallet is really fun for kids.

Dinner - my favorite counter-service is Redd Rockett's Pizza Port in Tomorrowland (the most amazing pasta!) and my favorite sit-down is the Napa Rose in the Grand Californian.

I'm not sure how the electric scooter rentals work - you might want to call on that. I see people using them so I know they are available each day, but they may sell out early in the day. Maybe you can find a local company to rent you one for the duration of your trip?
