I know that this is clearly a mistake on Disney's end since I didn't even ask about Liberty Tree Tavern, we have absolutely no plans to dine there, but it didn't seem like there was anything they could do about it now.

Don't be frustrated, who knows maybe the food is not going to be good at Le Cellier that particular week and your Personal Angel was watching out for you?
I would absolutely go with LTT and see what that's all about. It's and adventure. Yes, that's what it is. An adventure.
