You could ditch the photographer and give disposables to the Guests. Or, better yet, ask a talented family member to photograph for you. The only thing you will miss is the 'choreography' that a traditional wedding photographer does. Same with a videographer. Have someone just set it up, up front, then let it roll unattended.
I think it would help knowing what the packages entail, and what you can or cannot cut, in order to make more intelligent recommendations. Disney has stringent rules on what can be photographed professionally, but no one is going to stop a bride on her wedding day, being photographed by her loving family members, know what I mean?
