For the flight, have a bottle, pacifier or sippy cup she can suck on for take off and landing as the pressure can really bother some little ones ears. If she crys, try not to let it stress you out, even if people galre at you as if you were ruining their entire trip--don't sweat it--she will be more apt to calming down if you are not stressed

Take some favorite toys or books (quiet ones) that make her happy--and a new something small as well. Try not to overpack your carry on items, the fewer things the easier it will be to manage security and boarding. Some people try to fly at naptime, but most of the time I read that the baby fell asleep in the car on the way to the airport, lol.
At Disneyland, she will be entranced! There are new sights and sounds, just go with her schedule and don't try to do too much. You can take her on Jungle Cruise, Pirates, the Haunted Mansion (my kids were oblivious to the 'scary' aspect of it that young, and would fall asleep in the gentle moving car and cool air), Pooh, most of the Fantasyland rides, the Rail Road, and more I'm sure I am forgetting right now. The Tiki Room scared my DD at 2.5, but both of my sons liked it at 1 and 1.5.
