ABSOLUTELY - Go DCL without kids! I would recommend DCL to people who aren't big Disney fans. Sure the characters are around, but it's not overwhelming.
The 3 and 4 day cruises are a great way to try it out. As a DVC owner and long time WDW visitor, I always EXPECT good service. DCL blew me away.
Do NOT miss the live stage shows!
There are plenty of "adults only" activities and areas. I highly recommend the couples massage.
BTW - the you'll hear pros and cons about using points for cruise. If you look at the annual dues cost it is well below the cash price. If you want to rent the points out, you can get more per point but you are paying more. Points are easy to rent. There is some work and even a little risk, but it can be worth it.
