I think there's a lot to do for two adults - both at the parks and on the cruise. I've cruised with friends and family 4 times (and have another one planned next year), and never with kids. Actually, I was amazed at how busy they keep the kids - every time, I'm surprised at how many kids are actually on the ship with us. I would never guess it!
Dinner/brunch/tea at Palo's is a definite "don't miss" for adults. And Serenity Bay on Castaway Cay is paradise!
Deb's website is a good one - for the cruise, I would recommend the Passporter's Guide to Disney Cruise Line. Also, the Disboards have a very active cruise board.
