Don't sweat it. Both Disney and DCL are geared for all types of guests. There is plenty of things to do, plenty of shows and rides that are suitable for all ages. Take in the 3-D shows and such. You might be suprised to find there is a whole lot more to Disney than rides.
And MOST of the rides are really ok for just about anybody. While I was at the sneak a peak pre opening for Everest, there was even an 80 year old who rode it TWICE!
Go and enjoy the time with your GM. You'll be glad you did.
There will be lots of other trips when you can ride what you want, but how many times will you get the chance to spend time with her?
