You'd think I would know better since I was a front desk CM for 3 years, but for some reason all the info I need for my own trip I have managed to forget

I'll try to answer your questions and quell your fears.
As far as lost luggage, the AIRLINE is where your fear should be directed, not Disney.
DME luggage tags have barcodes. When the luggage makes its way between airplane and baggage claim, airport employees and Disney CMs pull the DME-tagged bags from the regular luggage stream and bring them to Disney's own luggage sorting facility, which is on the grounds of the airport. DME tags are scanned for the first of FIVE times. Bags are sorted by zone and then by individual resort. They are scanned again and then loaded into locked cages, and then the cages are loaded onto DME luggage delivery trucks and the cage itself is scanned. The trucks themselves are tracked by GPS.
Cages are dropped off at the individual resorts. The luggage is now in the hands of resort Bell Services/Luggage Assistance CMs. The bags are scanned a fourth time as they are taken from the cages, and then are scanned a fifth and final time AFTER they are brought inside the guest's room, whether or not the guest is inside the room at that time.
In other words, Disney knows where your bags are at all times.
More on "outbaound" luggage when I have more time.
