the poly is a great resort !! last time we stayed there our DGD were just a bit older then your kids. they loved story time in the lobby.
I agree with GrumpyDad about tiffany towncars and I vote also you get the park hoppers / ultimate park hoppers.
I dont believe there is anything that increases you chance of getting a princess breakfast ..but they do a wonderful charactor breakfast at O'hana's
