If CC is your and your DH's favorite place, I would consider going there for vacation. Pack up the kids, the cameras and the coolers. Plan some together things to do and have a great time at CC. My family and I skipped WDW this past year and went to Niagra Falls. I had the same concerns as you with the kids-taking away memories etc. But we did things together at Niagra and created a whole new set of (non Disney) memories with the kids that we will all carry with us all our lives and remember fondly. Believe it or not, non Disney vacations can be fun too, and your children are young enough that if you decide in the future you can afford to go to WDW, they will still be in awe of the characters, etc. I think you will be fine at CC. ;-)
