How fast does Castaway Cay snorkelling fill up?

We booked the snorkeling package at Grand Cayman, but I wanna see fish-ys and pretty coral reefs. I wanna find Nemo, lol!! Castaway Cay's snorkeling sounds like it would be what I'm after, but I wanted something more "exotic". So I was hoping that if I'm disappointed after the snorkeling at Grand Cayman I could then sign up for the snorkeling @ Disney, I guess on the day the ship pulls in? Is this still possible??? Does Disney permit you to sign up day-of like they do w/ float rentals? And even if they do, will the snorkeling already be booked up so there wouldn't be room?
