We Met Santa & Mrs. Claus!!!
OMG, I forgot one of the cutest things we saw during our trip! (Apparently, it's impossible to take COMPLETE notes)
Santa and Mrs. Claus work at the Backlot Express at MGM! On our first morning, we decided to mozy on over to MGM. After RnRC, ToT and Star Tours, we meandered over to Backlot Express for lunch (very good BTW) and there was a really friendly older gentleman at the register who beckoned us over to take our order. He was really funny, making jokes and telling us stories of how long he had been married. He pointed out his wife of 52 years, who was working behind the line and kept us thoroughly entertained as we decided what to order. I looked at his name tag and it said S. Claus. Her name tag said Mrs. Claus. What an honor it was for us. We didn't ask why they were down in Florida so close to Christmas, but we figured that the elves must have had everything under control and this would be a good way for them to do some reconnaisance and meet some families in order to double-check the naughty/nice list.

There is an actual Santa Claus that is always at Epcot who works for Disney. I dont know if its the same man that you are talking about, but it could be.
