Jessica, welcome to DisneyCentral. I guess which building is the best depends upon what you want. I would suggest Tahiti. The rooms are the largest of any of the buildings in the Poly, it is close to the Ticket and Transportation Center, the lagoon view rooms have by far the best view of the Magic Kingdom and it is far from the main pool and the Luau area (noisy!). We will be staying in the Poly in December, and I have requested the Tahiti building.

Your other good options would be Tuvalu or Aotearoa, which have both just been refurbished.

Make sure you check out Tikiman's site before you go. It will really get you excited.

A lot depends if you are travelling with children. We've stayed at the Fiji , Hawaii, and Rarotonga long houses. I would not recommend Fiji, too close to the luau and you hear the luau during the evening hours. Hawaii was very nice, lagoon view and and near the pool. We stayed at the Rarotonga longhouse this past trip with my daughter, and it was very nice if you are travelling with children. You were very close to the volcano pool, Great Ceremonial House for food and transportation, and the arcade. If you are travelling with no children, I would recommend Hawaii or Tahiti lagoon view.
And by all means check out the site Mickey recommends because it provides great information and photos.
Have a great trip!:)
