Cheese Soup @ Le Cellier

I was just at WDW 10/8-10/11 during the Food and Wine Fest. They have different stands for many countries. The Cheddar Cheese soup @ the Canadian pavilion was delicious!!!! Its the same stuff they serve at Le Cellier.

Yes,the cheese soup is good,but the outrageous price they charge for maybe a half cup of product sort of killed the enjoyment for me.

Just make it yourself:

Ingredients:
1/2 lb bacon cut into 1/2 in. pieces
3 celery ribs cut into 1/4 in pieces
3 cups milk
1 medium red onion cut into 1/4 in. pieces
2 tbsp butter
3 cups water
3 dashes tabasco
1 cup flour
1/2 cup beer
3/4 lb. grated white cheddar cheese
salt and pepper to taste

Method:
In a soup pot, start to brown the bacon over medium heat. When the bacon is starting to get crisp, add the onions, celery and butter. Cook until the onion is translucent.

Add the flour and incorporate with the butter. Cook for 4 minutes, constantly stirring.

Add the water and whisk. Make sure there are no lumps.

Bring to a boil then reduce to a simmer and cook for 15 minutes, stir every couple of minutes.

Add the milk and continue to simmer for 15 minutes. Do not boil after you add the milk.

After the last 15 minutes, turn off the heat and stir in the cheese then the beer. Add the tabasco and season with salt and pepper. If the soup is too thick you can thin it out with some milk.

Serve with your favorite bread and top with some chopped scallions or chives.

I don't know the exact price, but it is in keeping with most Epcot restaurant prices. The reason the serving is smaller is that it is extremely rich. It is meant as more of an appetizer than a meal.

Unless its puuunnny, $4.00 does not sound bad. In NYC, I use to take clients to normal type resturants and spend alot more than that on soups and salads. I have always felt the prices at Epcot and other full service eateries are about the same prices as our areas eateries. (mid to steep)

Has anyone ever tried making in without the beer? (Which I'm sure should be Molson Canadian!) I just don't know if a non-alcoholic version would be the same.

Well, try it and see. It probably would taste a bit different, but not that much. Even if you use real beer, the alcohol will be burned off in the cooking.

In Mickey's recipe you add the beer after you remove the soup from the heat. I am assuming this would leave some alcohol? I'd love to be wrong on this one!

you could just skip the beer all together.

Seriously, the soup is very good and very rich and thick. If I ate more of it before a meal I would'nt be able to eat my dinner. The soup portion as an entire meal would not be filling enough, but along with dinner it's perfect. A crock of french onion soup anywhere in Jersey will cost you about $3.50, so being as how this cheese soup is yummy and you are in WDW, $4 bucks is a steal.
