Question about dining plan

So sorry if this has been asked before (I checked the dining forum and didn't see it spelled out for me-maybe I'm just a dummy )
Ok, so, here is my situation. I have APs that expire in Sept. and I am going to WDW in Oct. for 3 nights, 4 days. I booked the dining plan with a 1 day base ticket with the hopes of "upgrading" that ticket towards the renewal of my APs when I get there (I believe there is a month window of time to renew APs?) So, I won't be using my AP and DDE discounts on my meals, since I'll have the dining plan though. As far as I know, i only have the dining plan for 3 nights, so that last day, we'll have to pay for food (unless we've saved up some meals?) Say we want to eat at a table service that requires 2 credits (or whatever they're calling them) such as California Grill or Yactsman's Steakhouse. If we eat there 1 day and don't use our counter service for that day, can we then apply that counter service to the day that we are out of a table service, since we used it a few days prior? I don't know if I'm asking this properly, but if we can't eat at the places we would be eating anyway (CG, YS, FF, Ohana, etc) it's not even worth it to use the plan. Also, are DTD and Swan/Dolphin restaurants included?? sorry this was so long and convoluted. Thanks for any advice!

With the dining plan, you are basically just given a big pile of meal credits when you check in. So, for 3 nights, you will get the 3 counter service, 3 sit down meals and the 3 snacks for each person. If you want to use them all the first day, you can do that. If you saved up all your snacks until the last day, you can have a meal of Coke and popcorn. Just depends on how you want to use them.

The only DTD restaurants (sit down) is Cap'n Jacks, Planet Hollywood and Wolfgang Puck's Cafe. For the last two, you can only order certain items. The Swan and Dolphin are not Disney resorts, so nothing there is included. Oh, and 'Ohana is on the list. You can see the entire list here, and what is included:
