My tentative dining plans

Well, it is almost time for me to call in and make my PS's (I know they are ADR's now, but I am so used to calling them PS's), so I thought I would get some input from the experts here at DC about our tentative plans for our upcoming trip. Let me know what you think.
Dec. 11 Dinner at LTT This is our MVMCP night
Dec. 12 Lunch at Beaches and Cream (too bad I can't make a PS here.) This is my DD's b-day and B&C is one of her favorite restaurants and since we'll be at Epcot, I figure a good choice.
Dec. 13 Counter service for lunch and the H&V Fantasmic Package for dinner
Dec. 14 CRT for breakfast and counter service or offsite for lunch and dinner
Dec. 15 We have left it open. We will be at AK so we might do lunch at Tusker House or Flame Tree BBQ, but if we finish up before lunch we will eat wherever we are.
Dec. 16 Le Cellier for lunch
Dec. 17 We might go to visit my DH's grandmother for the day (unless she has already left to come back to Michigan for Christmas), so we will keep this day open
Dec. 18 Crystal Palace for breakfast and the rest of the day is open depending on where we are.
Dec. 19 Rose and Crown for dinner
Dec. 20 Mama Melrose for dinner
Dec. 21 Breakfastosaurus for breakfast and the rest of the day is open
Dec 22 Ohana for dinner
Dec. 23 Chef Mickey's for dinner
Dec. 24 Most of the day is open, but we will go to Beaches and Cream for dinner (DH and DD love this place.)
Dec. 25 1900 Park Fare for breakfast and CRT for dinner
On Dec. 26th we will be moving over to Universal Orlando
Dec. 26 Thunder Falls Terrace for lunch and Mythos for dinner
Dec. 27 Cafe La Bamba for lunch (This is a big ? for me. It is my Dsister's and DH's idea. I am not sure I want to eat lunch here, but it is only counter service so they can't mess it up too bad.) Margaritaville for dinner
Dec. 28 Lunch is open and we will try Finnegan's for dinner
Dec. 29 Confisco Grille for breakfast to celebrate DS'[s b-day with Spiderman. Lunch and dinner are open
Dec. 30 ????????
Dec. 31 ????????
Jan 1 We are leaving for home, so we will be eating on the road.
Well, as you can see it is a long trip. I have tried to not over plan since we will be there for so long and am trying to be flexible . Any suggestions would be great. Thanks for your input.

All excellent choices ! We have been to many of the places you've picked.

Hopefully you'll be able to try the Flame Tree BBQ at AK. To me this was a very unique and tasty kind of place for a counter service meal.

Just curious, are you on the dining plan?

If you haven't already made your ADR for the MVMCP night you need to go ahead...you don't have to wait until the 90 day mark for that one!

Otherwise, it looks great!!!! I'm curious too, are you on the dining plan?

No, we are not on the dining plan. We got such an awesome rate on teh room that it is WAY cheaper for us to just pay for our meals.

This will be our longest trip yet. I think DH is trying to get me burned out so that I will not start planning another trip as soon as we get home. Not possible, but I sure won't complain about the length of the trip. I also did not want to make the kids jealous of each other, so we HAD to be there for both of their birthdays.
