Ok here is the final draft.......Note that we usually decide on which park, or what we are going to do, the night before. Oh, and no we did not opt for the DDP.

5/8 - Land around 2:00pm, get car, stop and pick up snicky snacks, water etc
Arrive at CBR around 4:00pm. Settle in and dinner at Big River Grille.
Hang out at BW and turn in. Maybe hit the pool first, then turn in
5/9 - Call WWOS about NFL Experience for DS then TL in a.m., head back to
resort, rest up then clean up, dinner probably at resort and hit a park
most likely AK for EMH.
5/10 - Make Ressie for Buggy Ride at Disney's Wilderness Preserve on Sun.
Hit a park, back to the resort to relax and clean up, then dinner at
Chef Mickey's. Go to MK for Spectromagic and Wishes.
5/11 - Most likely return to TL (DS and DH can't get enough of the park ),
return to resort to rest and clean up. Dinner at Boma and hit another
park.
5/12 - Nothing planned, most likely decide what we are doing the night
before.
5/13 - A day at Disney's Wilderness Preserve and Buggy Ride. Dinner at
1900 Park Fare for Mommy's Day...
5/14 - Breakfast at Donald's Breakfastosaurus and AK for the day. Again
winging dinner.
5/15 - No plans again, decide the night before. And again, most likely TL.
5/16 - Chef Mickey's breakfast and most likely MK. Cirque in the evening
so will eat at DTD. I want to try EOS. Depending on how late we
get out, we may hit DQ.
5/17 - No plans but usually hit DQ this night on our trip.
5/18 - MGM for Star Wars Weekend. I am hoping is still starts on Friday or we
will be hitting it on our last day, Sat.
5/19 - Check out day Usually go to DTD, hit the stores, DQ and
Planet Hollywood for late lunch before heading to the airport.

Other dinner options we have listed and will call the night before are.....
ESPN Club (always a must)
Mama Melrose's
House of Blues (always a must)
Cape May Cafe
Ohanas
Wilderness Lodge
Rainforest Cafe
Crystal Palace

We also wind up playing a round of miniature golf and end the evening at Beaches n Cream.

Ok so what do you think. I know you are going to say, make ADR's but as I said, we do not like to be on a daily schedule. I don't mind certain days planned out, but not my entire vacation.

Hey, if it works for you then that's what counts. I'm still kind of a novice at WDW, but my wife and I are taking a more flexible approach this year too. The one thing that I've found invaluable was having the WDW Dining res number saved in my cell phone. Even a last-minute ressie is still a reservation. One quick phone call can save some shoe leather or a wasted bus ride. Have fun!
