You are making good use of your 5 day park hopper and of early entry for the mornings. I might suggest, as your sort of thought, that doing the EE park until lunch or so, then rest at the hotel or just go to another park that should have less crowds. For instance, you could do MK early the day you planned but then break out by lunch to Epcot. Then do the reverse the EE day at Epcot. Sounds like your off to a great start in the planning stage.
