unused passes

If I purchase extra days on our passes now and I see that we are not going to use them can I put the no expiration on them before we leave WDW?

Yes, you can. we did that a few years ago.

You will pay for no expire on all the days you purchased, not just the ones you didn't use.

What I would do is use the tickets you have as credit for an upgrade to no expire and add a couple days while you're at it. That way, at least you'd have 5 fresh days instead of 3 days that you pay for six days worth of no expire.
But of course, you still need to do this before you leave.
